Tasty Quark-Sesame Bagels: a healthy recipe for everyday life

Ingredients

200 g spelt flour 630

50 g neutral protein powder

25 g almond flour (optional, can also be replaced with more spelt flour)

6 g salt

250 g low-fat quark

8 g fresh yeast

30 g water

Topping: coarse salt and sesame


Preparation:

1. Prepare the dough: Preheat your oven to 180 degrees (top/bottom heat). Put all the ingredients into the mixing bowl and knead for 5 minutes on the kneading setting. The dough might be a bit sticky.

2. Let the dough rise: Cover the dough and let it rest in a warm place for about an hour, until it has risen.

3. Shape the bagels: Divide the dough into five equal portions and roll each piece into a log. Moisten the ends with a little water and press them together to form round bagels.

4. Add the topping: Brush the bagels with water and generously sprinkle with sesame and coarse salt.

5. Baking: Place the bagels on a baking tray and bake them on the middle rack for about 15 minutes. Then move them to the top rack for another 5-7 minutes to get a nice golden-brown crust. Let the bagels cool on a wire rack.

Alternatively, in the air fryer: You can also make the bagels in the air fryer. Set the air fryer to 170 degrees and bake the bagels until they're golden brown. Make sure to leave enough space between the bagels so they cook evenly.

Tips:

If you like your bagels a bit more savory, you can spice up the topping with extra seasonings like garlic granules or paprika powder.

These bagels are perfect for meal prep: You can bake them ahead of time and store them in the fridge for about 3 days. They're also great for freezing. I recommend slicing the bagels before freezing so they fit easily in the toaster or similar.
