Healthy Apple Protein Cake – Delicious and High in Protein

Ingredients for the Apple Protein Cake:

  • 70 g soft butter

  • 40 g maple syrup (or another liquid sweetener of your choice)

  • 2 eggs

  • 70 g tender oats (ground or shredded)

  • 30 g almond flour or spelt flour

  • 30 g protein powder (natural or vanilla)

  • 2 tsp baking powder

  • 2 small apples

  • 1 tsp cinnamon

  • 1/2 tsp vanilla

How to make the Apple Protein Cake:

  1. Mix butter and maple syrup: Beat the soft butter with the maple syrup in a bowl until creamy.

  2. Add eggs and dry ingredients: Stir the two eggs into the butter-maple syrup mixture. Then add the oats, almond or spelt flour, protein powder, baking powder, cinnamon, and vanilla, and mix briefly.

  3. Prepare apples: Cut the apples into small cubes. You can leave the skin on for extra fiber, or peel them if you prefer.

  4. Bake the cake: Line the bottom of a baking pan with parchment paper and spread the dough thinly over the bottom. Set some of the dough aside. Evenly distribute the apple cubes over the dough and dollop the rest of the dough on top. Smooth it out with a spoon.

  5. Baking: Bake the cake in a preheated oven at 175°C fan for about 25-30 minutes, until it's golden brown and cooked through.

Tip: You can also swap the butter for nut butter. (Maybe add a splash of milk or water, too)
